21. PECAN CRUSTED SALMON

INGREDIENTS
- 2 pounds salmon filets
- 3 tablespoons chopped pecans (salted or unsalted)
- 1/4 cup parsley, chopped
- 1 cloves garlic, minced
- Zest of 1 lemon
- 2 tablespoons olive oil
- Salt & pepper
INSTRUCTIONS
- Preheat oven to 350°F (180°C).
- In a small bowl, combine pecans, parsley, garlic and lemon zest with olive oil.
- Season the salmon filets liberally with salt and pepper.
- Spread the topping evenly over the salmon filets.
- Bake salmon on a parchment lined baking sheet *affiliate link for 20 minutes or until fish is fully cooked.
