17. SPINACH AND WHITE BEANS WITH DITALINI

INGREDIENTS
- 1 cup uncooked ditalini pasta
- 1 tablespoon olive oil
- 1 small yellow or sweet onion, diced
- 1 cup water
- 1 tub reduced sodium chicken Knorr Homestyle Stock
- 1/4 teaspoon crushed red pepper flakes
- 1 6-ounce bag fresh spinach leaves
- 1 15-ounce can white kidney beans, drained and rinsed
- 1/4 cup pecorino romano or parmesan cheese
INSTRUCTIONS
- In a large saucepan *affiliate link, cook ditalini according to package directions.
- While pasta is cooking, heat olive oil in a large skillet *affiliate link to medium heat.
- Saute onion until translucent – about 5 minutes.
- Add water, stock tub, pepper flakes and spinach leaves.
- Cover skillet and wilt spinach.
- Add strained pasta, beans and cheese, stirring to combine.
