11. CREAMY SWEET POTATO & ROSEMARY PENNE

INGREDIENTS
- 1 16-ounce package penne pasta
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- 1 1/2 cups pureed or mashed sweet potatoes
- 1/2 cup reduced-sodium vegetable broth
- 1 – 2 tablespoons chopped fresh rosemary leaves
- 1/2 teaspoon salt
- 1/4 cup pine nuts, toasted
INSTRUCTIONS
- In a large stockpot, cook the pasta in salted water according to package directions for al dente.
- In a large saucepan *affiliate link, heat olive oil to medium. Add garlic and sauté until fragrant – about 1 minute.
- Whisk in sweet potato, vegetable broth, rosemary leaves, and salt until combined. Reduce heat to low and keep warm until pasta is ready.
- Strain pasta, reserving 1 cup of pasta water.
- Toss pasta with the sauce and 1/2 of the pasta water. If needed, add the remaining pasta water to loosen the sauce before serving.
